LOCAL HARVEST BARGAINS

Samascott  Orchards is the place to be at 9 a.m. Tuesday thru Friday if you want a sweet corn bargain (60 ears for $10 or $.17 per ear).  Call them at 518 758 7224 so they have your bag ready.

Their corn picker machine picks every ear.  Not every ear is perfect.  Slightly imperfect ears are sorted out and given as a treat to their beef animals.  Those imperfect ears would like to go to a food preservation  kitchen.  It could be your home kitchen.  Visit www.pickyourown.org and see if you have the equipment to do your own preserving at home.

The picture shows the steps:  Remove the husks. Wash the corn and remove the silk.  Cut off the ends.  Sort the corn so the sizes match.  Place the corn in a boil in bag and vacuum pack.  Place the bag in boiling water for 7 to 9 minutes.  Cool in water.  Dry the bag and place in the tray freezer to freeze.
