Fruit Sauces
European colonists brought fruit trees from Europe to America's Hudson Valley on the first boats. Quickly Colonial cooks learned to dry fruits in front of their fireplaces and used honey and maple syrup on the fresh fruits that they picked. New recipes were created when the Dutch West India company sailed up the Hudson River in the 1700's to sell sugar from the Caribbean. Cooks for the Dutch manor houses quickly learned to use sugar to preserve the fruits of the Hudson Valley in jars as jam, as candied fruits and as fruit pies. We use their recipes today. But should we limit ourselves to recipes of the past or should we explore new, healthier possibilities with 21st century knowledge and simple, proven technology--freezing and vacuum packaging? Frozen fruit sauces are healthy fruit product options with many uses.
